Quick Pickled Radishes

0.5 pounds radishes, cleaned and sliced thinly
1 inch section of fresh ginger, peeled and sliced very thinly
1–2 garlic cloves, peeled and minced
0.25 cups rice vinegar
1 teaspoon salt
Instructions
- layer radishes, ginger, and garlic in a small jar
- bring vinegar and salt to simmer in a small sauce pan until salt is disolved
- pour vinegar over radishes
- cover, refrigerate for 30 minutes
