4 ounces gin
3 golden kiwi (or green; golden are sweeter)
1.5 ounces simple syrup
1 ounce fresh lemon juice
Kiwi slice, for garnish
Peel and chop kiwis.
Thoroughly puree kiwis and simple syrup.
Add to shaker WITHOUT ice: kiwi puree, gin, lemon juice, and egg white; shake for 20-30 seconds.
Add ice and shake again.
Strain into chilled, ice-filled rocks glass.
Garnish with kiwi slice.
