Quick Pickled Radishes

Ingredients

0.5 pounds radishes, cleaned and sliced thinly

1 inch section of fresh ginger, peeled and sliced very thinly

12 garlic cloves, peeled and minced

0.25 cups rice vinegar

1 teaspoon salt

Instructions

  1. layer radishes, ginger, and garlic in a small jar
  2. bring vinegar and salt to simmer in a small sauce pan until salt is disolved
  3. pour vinegar over radishes
  4. cover, refrigerate for 30 minutes
