Sesame-Soy Chicken with Green Onions
- 1 pound boneless, skinless chicken (breast or thighs)
- 2 bunches green onions
- 2 tablespoons peanut sauce
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- Boil chicken, allow to cool, and then shred to about 1″ chunks.
- Slice green onions.
- Heat peanut and sesame oils in a skillet.
- Carefully add soy sauce.
- Add chicken and green onions; heat until warmed through.
- Serve over rice.
