Sesame-Soy Chicken with Green Onions

Ingredients

  • 1 pound boneless, skinless chicken (breast or thighs)
  • 2 bunches green onions
  • 2 tablespoons peanut sauce
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce

Instructions

  1. Boil chicken, allow to cool, and then shred to about 1″ chunks.
  2. Slice green onions.
  3. Heat peanut and sesame oils in a skillet.
  4. Carefully add soy sauce.
  5. Add chicken and green onions; heat until warmed through.
  6. Serve over rice.
